Chicken Quesadilla

This recipe is something that we whipped up quickly on a Saturday afternoon. It has quickly become a family favorite. It's so easy that with only minor supervision our kids have made it!

We always have cooked chicken hanging around our house. Not sure how to cook a whole chicken? Place a thawed chicken in a crockpot with 1/2 cup of water for 8 hours on low. These chickens will fall off the bone and are easy to shred and debone. This way you have chicken ready in the fridge for a variety of recipes.

Total Time: 30 Minutes

INGREDIENTS:

2 T of Olive Oil

1 Small Yellow or Red Onion, Chopped

2 Bell Peppers, Chopped

1 Tomato, Chopped

2 Cups of Cooked Shredded Chicken

Pepper Jack Cheese or whatever you have!

Flour Tortillas

Salt, Pepper, and Garlic to Taste

Optional: Jalapeño, chopped

INSTRUCTIONS:

  1. Turn skillet or flat griddle to medium/ high heat.

  2. Add olive oil, chopped peppers, onion, tomato, and jalapeno if desired. Add salt, pepper, and garlic to taste. Sauté vegetables until soft. About 5 minutes.

  3. Remove vegetables from the griddle.

  4. Heat cooked chicken if cool on the griddle for two minutes.

  5. Remove chicken from the griddle.

  6. Add a tablespoon of oil on a griddle, use spatula to spread throughout the entire service.

  7. Place one flour tortilla onto oils on the griddle.

  8. Layer cheese, vegetables, and chicken on half of the tortilla. Fold the     uncovered half of the tortilla onto the vegetables.

  9. Cook the flour tortilla on the griddle for 1 to 2 minutes or until the tortilla is    starting to brown.

  10. 10. Flip tortilla and brown opposite side.

  11. 11.  Serve immediately.
